The first recorded history of humans foraging honey was from cave paintings Cuevas de la Araña in Spain 8,000 years ago. Honey has long been known for its therapeutic effects. Although it composed primarily of fructose and glucose, honey also reported to contain at least 200 substances such as fructo-oligosaccharides, amino acids, vitamins, minerals, and enzymes.

Studies shown that natural honey contains flavonoides, phenolic acids, ascorbic acid, tocopherols, catalase, superoxide dismutase, glutathione, Millard reaction products and peptides. These wide range of compounds work together to provide a synergistic antioxidant effect.
